Ingredients
- 2 quarts homemade chicken stock
- 2 cups cooked organic chicken shredded and chopped
- 4 cups organic marinara sauce
- 1/4 cup white wine
- 6 cloves garlic chopped
- 1 onion diced
- 2 shallot diced
- 1 stalk organic celery diced
- 1 small organic carrots diced
- 1 tbsp Dijon mustard
- 1 tbsp parsley flakes
- 1 tsp thyme
- 1 tbsp turmeric
- 2 cups organic frozen mixed vegetables
- 2 cups fresh kale chopped fine
- finely grate Parmesan optional

Instructions
- Combine onion, shallot, celery, and carrot to a well-oiled soup pot and cook over medium heat until soft.
- Add mustard, parsley, thyme, white wine and chicken and simmer for 3-5 minutes.
- Whisk in marinara, stock, turmeric, and garlic and simmer for 30 more minutes.
- Ten minutes before it's ready to serve, add frozen mixed vegetables.
- Cook 5 minutes before adding kale.
- Serve with Parmesan.
