Healthy Chicken Piccata
Instructions
  1. Dry the chicken cutlets.
  2. Coat chicken in the arrowroot powder.
  3. In a large pan, heat oil or ghee over medium-high heat.
  4. Cook about 3-4 minutes a piece per side.
  5. Remove from pan.
  6. Do not clean the pan.
  7. Zest the lemon, cut the lemon for garnish.
  8. In the same pan as the chicken, add the broth and white wine if you are using. Bring to a boil, reduce heat scrapping up any browned bits from the pan. Simmer about 2 minutes.
  9. Add the lemon zest and capers.
  10. Add salt and pepper to season.
  11. Top chicken with the sauce.
