Mediterranean Beans and Rice
  1. Cook the brown rice.
  2. Heat up the oil in a large pan over medium-high heat and fry the onion for 5 minutes.
  3. Add the garlic and fry for an additional 5 minutes.
  4. Stir in the beans and heat through.
  5. Add the celery and olives to the bean and onion mixture and fry for a few minutes to soften.
  6. Stir in the lemon juice and parsley and heat through.
  7. Stir the dill into the rice.
  8. Add salt and pepper to taste.
