Sausage Breakfast Stir Fry

Ingredients

water

old-fashioned oats or rice

safflower oil

green onions sliced
3
large eggs, beaten

cup
peas and carrots defrosted
1/2
pound
cooked sausage
2
tbsp
low-sodium tamari or soy sauce
Instructions
Bring water to a boil in a medium sauce pan.
If using oatmeal: Add the oatmeal and simmer for 5 minutes, stirring occasionally.
If using rice:
Add the rice and stir to combine. Cover with a lid and cook untouched for 25 minutes. Fluff with a fork.
Heat a wok or large skillet over medium-high heat. Add the oil and swirl around the bottom of the pan.
Add the green onions and cook for one minute, stirring so they don’t brown.
Add the eggs and cook until set.
Toss in the peas and carrots, stir.
Add the sausage, cooked oatmeal or rice and tamari/soy sauce. Toss to combine.
Serve hot or warm.
