Ingredients
- 1 Ripe banana
- 2 eggs
- 1 tsp vanilla or vanilla bean powder
- 1/4 green apple, sliced
- 1-2 tbsp almond butter
- 1-2 tbsp dried coconut flakes
- 1 tsp cinnamon
- Coconut oil for cooking

Instructions
- Using a fork, mash the ripe banana and mix it with the eggs and vanilla in a bowl. The batter will be lumpy.
- Great a skillet with coconut oil and turn stove to medium heat. Add the lumpy batter and with a spatula, continue to mask and stir the mixture.
- Once cooked, remove from skillet and place in a bowl. Top with apple, almond butter, coconut flakes, and cinnamon.
